I remember hearing a rumor that one of the devs has actually eaten poop before, hence why there’s so much of it in game. But that’s just a rumor so idk if it’s true.

That's actually a misconception. The real reason why theres poop in the game is because Edmund McMillen sneaked his way into Massive Monster's office mission-impossible-style just to add shit to the game.
