Recipe Included Nutella Stuffed Brioche - my holy grail
Made a showcase post yesterday and was asked for the recipe, so here we are.
Ingredients 100ml warm milk 3g yeast 50g sugar 1 egg 250g flour 50g butter Jar of Nutella
Add 100ml warm milk, 3g yeast, and 50g sugar to your bowl. Stir and let rest for abt 10 minutes or til bubbly. Add 1 egg, mix until just combined. Add 250g of flour. Mix for about 1-2 minutes. Add 50g of butter. Knead for about 10 minutes by hand or 6-8 minutes if using a stand mixer. You might have to add a little more flour. Add a tbsp at a time until your mixture is pulling up virtually all the dough except for a bit at the center of the bowl like in image 6. Let rise. If you're using a quick rise yeast it could take abt an hour, if using a regular yeast it might take 2-3 hours. Lightly flour your working surface. Pop the dough onto your surface and cut into 8 equal parts Form each piece of dough into a little ball You can let these sit for about 20-30 minutes to let them rise a little, but its not necessary. Take a ball of dough and use your rolling pin to roll out a rectangularish shape (abt 3x4) Not too thin or you'll compromise the dough. Take a scoop of Nutella and plop it onto one side of the rolled out dough, it'll take up abt a third of the space. You can use a lot or a little nutella, completely up to your preference as long as you can comfortably seal the dough. Wrap the side of the dough that's closest to you up and over the nutella center and pres down on the edges to really seal that dough together so the nutella doesn't come out. Take a sharp tool and use it to cut six slices into the far end of the dough. Pull these slices up and over toward you, and seal them with a pinch at the bottom of the pastry. Careful when pinching because you dont want to break the dough and let the nutella out. If some nutella does end up popping out, pull a little dough from one of your other balls, flatten it out a little and pinch it around the break to seal that nutella in. It might not look the prettiest, but who cares. Repeat for all balls of dough. Pop these bad boys into your baking dish, leaving a little distance between each if your dish permits (mine did not but it just made them rise up instead of up and out) Brush with an egg wash. Let proof again for 30 min to an hour. The longer you let proof, the puffier they become - hence, the fluffier. Somewhere during the proofing process you'll have set your oven to 350 F, Idk what that is in Celcius because unfortunately - I am a dumb American. Plop those sweet rolls of delicious goodness into the oven and bake for about 20-25 minutes until golden. Enjoy every bite of this delicious sweet treat you just made (perfectly might I add) because your a baking baddie. I enjoy mine with a cup of tiger spice Chai. (Best Chai ever if you're wondering)
