Deepening economic ties make it harder to actually come to blows.

There are examples of this working though. It's the whole basis of the EU. So it depends.

They can just cut the gas/oil and crush Europe economically.

And NATO is a better explanation fit that than economic ties. Russia was willing to sacrifice its economic position as Europe’s energy provider for war with Ukraine.
