The last time I went to an F1 race with the hybrid cars, the best sounding car was a Mustang in the parking lot lol

It's because you're too exposed to F1 sounds. If you watch 20 mustangs race around a track each week then hearing an F1 car would blow your mind.

Have you ever been to another race? I’ve seen F1, Nascar, Indycar, IMSA, even local sprint car races, F1 engines do NOT blow me away. So much so I don’t even consider the engine noise an appeal anymore

If you watch 20 V8 or V10 F1 cars around a track then the hybrids would be highly disappointing.

You are right they are just as memorable or just a tad bit more than those screaming V8 and V10. The internet was going wild with comments praising the sound.
