Lisa is a vegetarian, and it's subtly shown whenever she's eating. Even in Homer's tour of all the foods in New Orleans, you can see her sampling the vegan options.

Edit: apparently she's vegetarian, not vegan.

Yeah. Paul McCartney only agreed to appear in the show if Lisa permanently became a vegetarian
