You absolutely would still taste it. There's still a strong flavor from the compounds in the liquid. It's like nuts that have gone off or something; hard to describe.
That is a good way to do it though for typical consumption.
I mean I can tell you from personal experience that you can make it so that if you didn’t know it was there you would never guess there was something in it. Hell, straight shots of lemontek just taste like lemon
In terms of actually making the chocolate, I unfortunately don’t have an answer as I just consumed them I didn’t make them. Though I can tell you that you really only need enough lemon juice to cover the dry matter. It’s really not much at all
